Mom died a year and a half ago. She was a big part of our lives. I find that when I miss her most it helps to cook something she loved. It brings happy memories. So today, for my birthday, I made one of her favorite cookies: Lemon Bars.
As with many of my recipes, we change it to be Gluten-Free. For this recipe you only need to replace regular all purpose flour for those of you who do not need to follow a gluten-free diet.

Lemon Bars
Tools I need:
Mixing Bowl
Whisk
Pastry Cutter
9 x 9 inch pan
Measuring cups
Measuring spoons
Food I need:
All Purpose Flour (GF version used here: Tom Sawyer Flour)
Powdered Sugar
Butter or Margarine
Eggs
Sugar
Baking Powder
Lemon Juice
Lemon Rind
Directions:
Preheat oven to 350 degrees.
Combine in mixing bowl:
1 cup flour
1/4 cup powdered sugar
Cut into the flour mixture with pastry cutter until it creates pea sized mixture
1/2 cup butter or margarine
Press into the 9×9 pan
Bake crust for 12 minutes for GF, 15 minutes for non GF.
While crust is baking combine:
3 eggs
1 1/2 cups sugar
3 Tbsp. Lemon Juice
1 tsp lemon rind
1 tsp baking powder
3 Tbsp Flour
Pour the mixture on top of the baked crust.
Bake for 20-25 minutes.
Cut while warm.
