Sweet Lemon Memories

Mom died a year and a half ago. She was a big part of our lives. I find that when I miss her most it helps to cook something she loved. It brings happy memories. So today, for my birthday, I made one of her favorite cookies: Lemon Bars.

As with many of my recipes, we change it  to be Gluten-Free. For this recipe you only need to replace regular all purpose flour for those of you who do not need to follow a gluten-free diet.

Lemon Bars

Tools I need:

Lemon Bars
  1. Mixing Bowl

  2. Whisk

  3. Pastry Cutter

  4. 9 x 9 inch pan

  5. Measuring cups

  6. Measuring spoons

Food I need:

  1. All Purpose Flour (GF version used here: Tom Sawyer Flour)

  2. Powdered Sugar

  3. Butter or Margarine

  4. Eggs

  5. Sugar

  6. Baking Powder

  7. Lemon Juice

  8. Lemon Rind

Directions:

  1. Preheat oven to 350 degrees.

  2. Combine in mixing bowl:

  3. 1 cup flour

  4. 1/4 cup powdered sugar

  5. Cut into the flour mixture with pastry cutter until it creates pea sized mixture

  6. 1/2 cup butter or margarine

  7. Press into the 9×9 pan

  8. Bake crust for 12 minutes for GF, 15 minutes for non GF.

  9. While crust is baking combine:

  10. 3 eggs

  11. 1 1/2 cups sugar

  12. 3 Tbsp. Lemon Juice

  13. 1 tsp lemon rind

  14. 1 tsp baking powder

  15. 3 Tbsp Flour

  16. Pour the mixture on top of the baked crust.

  17. Bake for 20-25 minutes.

Cut while warm.
